To preserve their naturally tart flavour, the black cherries are picked when perfectly ripe and prepared in the traditional way: the fruit is simmered at length with the addition of cane sugar and nothing else. Excellent for making “santa rosa”, a puff pastry cake whose recipe can be traced back to an eighteenth century convent.
