We have chosen a special region for our pasta: our wheat grows on the plains of Lazio’s Maremma, which are particularly suitable for growing cereals.
HIGH PROTEIN CONTENT
The favourable fertile soil and climate conditions help grow one of the finest ingredients in Italy thanks to the protein-rich wheat, which is essential for holding the pasta together beautifully when cooked.
The Zaffiri pasta factory uses incredibly pure cold spring water from the Abruzzo, Lazio and Molise National Park to produce a high-quality dough.
Bronze-drawing helps make the pasta porous, so it holds any sauces as best as possible.
SLOW DRYING AT LOW TEMPERATURE
The slow drying at a low temperature used during the production process helps keep the protein and vitamins the same, as they are found naturally in the wheat, giving the pasta an outstanding flavour and holding it together beautifully when cooked.
